Vitous Philharmonik included a few such samples. It was fun to draw listeners in at first when they heard realistic plucking and tuning, a couple of coughs and some silent "air" before the track began.
To the extreme (an probably undesirable), I've been listening to re-issues of Bernstein conducting the NY Philharmonic. The grunting, stomping, breathing, clicks, etc., certainly offer evidence that the recordings are of a real orchestra. But there is SO much more to it than this, of course. You still need expressive passagework and a great mix-- but "air" is very much a part of finishing the illusion.
