Never underestimate the dangers of what you think you know...
I've been having lackluster performance from the VIs, and my computer in general (BFD noted), for at *least* the past six months. I tried solution upon solution, thinking that something funky must be going on in the hardware, sync problems, and so on. I'm sure some of these "fixes" made an actual difference, but not enough to prevent me from feeling I absolutely had to buy a new machine if I was going to get any work done.
Now the "think you know" part. I actually worked as a Mac tech a couple of years ago, and during that time I got used to the idea that, more often than not, a complete erase and install was generally overkill. Well... to hell with what I thought I knew. Yesterday I went through the miserable task of a complete erase and install, as an absolute last resort, and today my machine is running like a new piece of hardware!!! Way beyond any expectations I may have had. I don't know if it's ever run this well, in fact -- and certainly not since I've owned the VIs, BFD, or even Logic.
Actually, it's hard for me to even imagine what was wrong. No 20/20 hindsight here... basically, it's a total mystery. However, my best guess is that an incremental upgrade, probably somewhere in the 10.4.2 -> 10.4.5 range, did the system in (though I can't say I ever recall it being considerably worse, all in one go).
Anyway, the moral of the story is, never assume you'll actually understand what's wrong with your system. If it's really "wrong" (and mine was definitely wrong), burn it to the ground, and start from scratch!
Oh. And once you get it purring. CLONE IT! (As I'm doing right now.)

ps -- I believe it was plowman who was having similar problems to mine, on the same system -- G5 dual 1.8, 8 RAM-slot version. If you're still having trouble, you might give it a shot. I honestly can't believe the difference!
