I am finally going to buy an Apple silicon Mac this year. I will convert my macpro cheese grater into a Vepro server on Ms windows. Anyone have opinions about which version of Ms windows is most reliable for Vepro? 10 or 11? Or dare I ask about windows 7?
it’s easier to use windows 10 on this machine plus I already have win10 license, but I would like to hear if there are compelling reasons to run Vepro on win11.

Hi! We suggest you go with Windows 11. Windows 10 does have an expiration date, so why bother? Windows 7 is a big no-no unless you do not value compatibility and support within the VSL world.

Right, well in my case since I'm going to repurpose an old computer, there may be some limitations about using Win11 to be honest, that's part of why I'm asking. Other then just being more up to date with windows, is there any reason to feel that vePro will run sub-par on windows-10 for the foreseeable future?

Use another HD on the old computer to try Win 11. Or, if it's a laptop with a single HD, create another partition and install Win 11 on it. There are quite a lot tools to keep the old partitions and split the HD with another one keeping all partitions data. There are also various OS boot wizards to choose which OS you want to run.
Am Incorrect that you move to Windows on your old Mac because the Apple blockage for updates to the later OS version and end of security update support for the last OS you can install? There are relatively simple means to overcome that. For each old Mac very clever people have tested which new OS can be used without issues. Advantage to stay on a MAC OS might be that you can keep apple SSD format.
I have my old iMac (original started on Mountain Lion so 2011) running Ventura as that allows installation of the latest version of Logic Pro. I also replaced the old HHD with an OWC 4TB SSD. It is a bit slow to start but otherwise perfect.
I’m running Monterey without any problems on my 5,1. But with the M4 line I am finally ready to make the jump to Apple silicon sometime in the next year. The 5,1 should not be updated past Monterey due to lack of avx2.
As such this perfectly functional and still reasonably performing 5,1 needs a purpose. Dedicated Vepro server is what I will do with it, running win11 in order to run a few plugins which I have that only run well on windows or will in the future be likely to only run on windows such as vipro.
This may enable me to go a little lighter on my desk top m4 Mac in terms of ram
