I normally write for concert band music.  Why would I want to use mono to stereo instead of stereo to stereo when setting up MIR PRO?

When MIR's input is derived from a mono source, the mono-to-stereo option makes sense. :-)

So when I place a VSL instrument into MIR I should select mono to stereo?

Apart from the Dimension Instruments series, all Vienna Instruments were recorded in stereo. But you _could_ use MIR for other signal sources, too, which _could_ come in mono (like a vocal track etc.).
