You would have to set the velocity crossfade to on or off on a per-patch basis. That's how I do it. In VI Pro, click on the "advanced" tab and choose a cell in a matrix. Underneath the patch slots within the cell, there is a tab called "edit", and this contains an option called "velocity XF".
Here, you can define the velocity XF state for every patch that is loaded in a cell. "Global" will set vel XF according to the global setting of VI Pro. "On" will have it enabled for the selected patch no matter the global setting, and "off" will obviously keep vel XF disabled no matter what. I have it disabled for any kind of staccato, spiccato, pizzicato, short portatos etc. and usually have it enabled on sustained, legato patches etc.
