How come, for every patch in the slot racks, I have to extend the keyboard range to it's maximum range? This is extremely time-consuming. Are those notes outside the sample ranges and therefore pitch-stretched? Can't find any mention of the reason in the documentation, which would be nice in the future.

You are correct by assuming that "extra" notes in the extreme low and highs are stretched - not real sampled. It was made available only as a matter of convenience, if someone lacks a few crucial notes, and would rather compromise realistic playback for the needed effect (of course its alright in some circumstances). But naturally - the default notes are the real samples, within real ranges, as played. And VSL musicians have extended ranges too, I personally never hit that ceiling in my writing.
