Personally, I load an instance of VE and then use the VS Power pan for each instrument loaded. In addition to the Power Pan I add reverb, either convolution or Hybrid it just depends on what I'm doing, I do this for every VE instance I have loaded. I do not use VI or VE Pro versions.
After the tracks are bounced I then EQ each track individually. Sometimes I use the presets, sometimes I use my own set ups. While mixing, if I find a track or two low in the mix I'll use either the compressor or limiter to put a little kick in them.
I find that the Exciter works wonders for choral tracks.
Once everything is mixed down, I put the analyzer on it to see what freqs need to be addressed. Then, I put the Master EQ on it, Reverb (converb or hybrid) to give the track an overall ambience which tends to meld everything together. Then, either the multiband Limiter and/or a multiband compressor (VS does not yet include a multiband Compressor so that plug-in is from my own stash of plug-ins).
I then analyze the final mix again to see if it needs any fine tunning.
