Is my early 2008 Mac Pro 8 core machine compatible with the latest VE Pro and MIR, or do I have to upgrade the hardware to the latest Mac? I'd rather not do that just yet, since Apple are this year probably going to release a significant upgrade to their Mac Pro line.

I´d say, check it out with a free demo license! MIR PRO will only work with a few channels though, here are the actual minimum system requirements for MIR PRO.

Yep, check out the demo and see how it goes. Like you said, you'd definitely have to get more RAM, though, because MIR eats up a good chunk before you even get to loading samples. I have a top of the line 2008 Mac Pro that I used to do everything in, but with the release of MIR Pro, I added a PC slave as Paul suggests. For the cost of a decent new Mac Pro, I built a ridiculously powerful 12-core Xeon machine with SSDs that I use only for VSL and GVI, while still running my sequencer, live audio and other virtual instruments on the Mac just like before.

I have that same machine and have recently pondered all the upgrade options as well.
In the end I increased my RAM to 24G and bought a MacMiniServer (Quad i7 with 16Gig RAM and SSDs) to be a slave. The MacPro upgrade options are hella-expensive, but once you've got one, slaving one or more MacMiniServers with VEP is very cost effective and works beautifully.
