Using different patches without a mod whell etc
I tend to compsoe with sibelius, much prefer to notate my music rather than use the midi keyboard to input my compositions. If I wanted to put my comps into logic and use the VSL sounds, how am I able to change the violin from playing sustained instead of staccato? I don't get all this assigning the mod wheel stuff. How are you suppose to control 16 instruments and there patch changes all at once with one controller like the mod wheel? :S I'm a complete noob I know

You can't control all the VSL-parameters with only one controller playing live.
When you want to controll different parameters of the VSL/ Vienna Instruments using Logic, you assign different Controller-types*) to the desired parameters.
When you use a keyboard with only a single controller (e.g. for modulation), you either
a) insert the different controller-types and values manually (similar to what you do with the notes in sibelius), or
b) make a setup in Logic that tells Logic: "When I now move the modulation-wheel, please transform the modulation MIDI-values into volume (or filter, or ...) MIDI-values."
*) a quick intro into MIDI-sequencing:
Any sequencer including logic communicates with a sound module like VSL via MIDI - meaning, the sequencer sends MIDI-signals to VSL, telling VSL, which note to play or what parameter to alter.
Within the MIDI system you can playback 128 different Notes - covering the whole piano range plus some extra octaves.
And you have 128 different Controller-types to controll the parameters of the samples (among others: volume, filter and modulation).
