I understand about selecting the natural volume when you load an instrument, but if you change the volume in the course of working with an arrangement, and want to change the instrument back to its natural volume, how do you do this? Is there a key command that will do this?

There is no way to bring the fader back to the Natural Volume value. I understand your whish, but actually this feature was intended to be used for a quick, meaningful setup of a new Project. The only workaround right now is to instantiate a new Icon with the respective Instrument Profile.
... I will keep that in mind - maybe we will introduce this as an additional feature in the future. :-)
