Just curious what kind of manuscript paper people use for notating their orchestral music (those that still do it that way), and where it can be found. Thanks.

I use three sizes of Novello pad for sketching things out -- A4 is my discardable paper, A3 is my working-on-the-desk paper, and A5 is my keep it for later sketchbook. (I have no particular attachment to the Novello brand, but the paper's decent enough, and the sizes are right for me. No particular recommendation for the Musicroom.com web site -- they just came up first on a Google.)
I also have a Moleskine music notebook in my jacket pocket as carrying-around paper, along with a fine-tipped pen. This book gets both musical scores and music-related ideas put in it, and also I also maintain a shopping list of scores and works to find at the back, whenever I'm in range of second-hand shops with a few minutes to spare.
In particular, I think that both the Novello A5 notebook and the Moleskine music notebooks are bargains, because of their quality and convenience.
I've tried printing my own paper, but you just end up with a pile of bright-white, unbound sheaves that have a finish that favours printing over writing; that's when you learn the value of off-white paper that's bound together, can go in your pocket, and can take the ink from a decent pen.
As for where to get it; I've bought all the pads I use in Foyles in
London, where I got to look through them before picking some.
