Simsy, much depends on the total amount, the type of drives and your arrangements - do'nt consider to recieve significantly more than 25 MB/s from a single drive. what is stressing a disk and producing the most heat is movement of heads, so to spread the symphonic cube across 2 drives would be a clever decision anyway and prolong the lifetime of your disks.
the other thing is the complexity of your file-hierarchy, less directories need a little bit less time to be scanned, but might worsen the view of content. grouping together orch strings, brass, woodwinds I + II could be a compromise
