I came here with the same question.
LONG time Finale user here, but maybe this is the opportunity to switch my DAW to Cubase as well. My assumption is that the DAW-to-sheetmusic is fairly seamless, baring special notation considerations.
Barring ultra-avant garde effects/notation, you can pretty much do anything with Dorico that you can with Finale, right?
Would be GREAT to use the VSL sounds for playback too.
I think the folks at Steinberg offer fully functional demo licenses for 30 days - that might be a good opportunity to find out if you find all the super-advanced notation symbols you need in Dorico, too.
The guys from Dorico certainly don't mess around! 😄
