In the end, I’ve gone for everything, but having to choose I would think the cymbals in SP2 are more important for orchestral writing, due to the presence of the gongs.

That was my choice. There's a good demonstration of the 70cm Tam on Youtube, it's really something.
And the Burma Gongs are pretty extensive in this.
