For sample storage configuration, does one get better performace if their libraries are spread over multiple SSDs as opposed to one very large SSD? Say, one for strings, one for winds and one for percussion+ odds and ends?
Would this decrease loading times?

Loading times will be decreased when lowering the Preload Size, e.g., with Vienna Instruments PRO or Kontakt.
Of course you will get more headroom when you distribute your samples to different drives, but you will get a great performance with 1 drive as well (that's what I do here).
How many GB of samples do you have?
