I have a similar approach....
I have a file called Origin, which basically has a track devoted to each instrument, there's a midi track and audio track for each instrument respectively, the audio is panned accordingly so once I bounce it's all set. I have them from top to bottom as follows, Strings, Woodwind, Brass, Percussion.
At the top is a master file where I keep the original piano piece. I'm also trying to figure out a way to make multi instruments of each family so I can play lines and have them doubled in octaves.
